What is a ute? I've seen a few kombi's being referred to as this and its always puzzled me

It is short for Utillity.

Ita an Australian term use for a "bakkie". Chris is right "UTE" = Utility. The Chev Lumina comes to mind. Here it is a bakkie and in OZ its a Ute.
