Anyone know how long I have between registering the beetle in my name to when I need to produce a roadworthy? Vehicle licence valid until year end on previous licence.

You are allowed to drive the car on the road for 21 days after "registration minus roadworthy". There is no limit on how long you take to get roadworthy, you just cannot legally drive the car without a special permit in the window.
What the previous owner's disc says is irrelevant.

Yes, you must register the car in your name within 21 days. At that point the previous disc becomes invalid. Most cops won't know you're using an invalid disc, but, if they do check, they will arrest you. No fine.

You don't ever have to roadworthy it, but you have to pay the licence every year regardless. Only once you present a RWC will you get a disc and can legally drive it on the road.

No. According to the law, all motorised vehicles must be registered, even if you don't intend to use them on the road, eg, quad bikes, tractors, etc, and you must pay the annual licence. If you want to use the vehicle on the road, then you must have it pass a roadworthiness test and provide the RWC to the licensing authority, which will then issue a clearance certificate (disc) authorising you to use it on the public roads. But you don't ever HAVE to roadworthy it unless you want to use it on a public road.
