Don't have any experience with this, but bear in mind that "factory" westys and delux type busses with ragtops were built with secondary "skins" underneath the chassis, to make up for the big "hole" in the roof.
I'm sure that this has been done before, try find some similar projects on the samba.com, etc, etc.
There are'nt that many unmolested panel vans in the good condition that yours appears to be in - make sure you know exactly what you're doing before you start.
